3 eggs beaten
1 cup of 2% milk
1 cup grated mozzarella cheese
1/3 cup diced and wilted onions
8-10 thin stalks asparagus
6-8 slices of prosciutto
1/2 cup grated parmigiano cheese
1 flaky pie crust
Directions: one line for each direction. When saved the lines will be numbered.
Pre-heat oven to 400.
Fry proscuitto in pan until crisp and drain.
Chop finely and set aside.
Steam asparagus until al dente.
Add mozzarella, asparagus, proscuitto, onion, and parmigiano(save two large pinches for top)to bottom of pie crust.
Combine milk and beaten eggs and season to taste.
Pour milk and egg mixture into crust and bake at 400 for 15 minutes.
Sprinkle top with remaining parmigiano.
cover with foil, reduce temp to 350, and bake for additional 30 minutes.
Remove foil for last 10 minutes.
Turn oven off but leave quiche in for another 30 minutes.
